Staying Moist

What's the best way(s)to keep sliced brisket and spare ribs moist and warm before company arrives? The oven, on low, dries everything out.

It can depend on how long you need to hold, but wrapped in foil in a cooler packed with towels is a way that many of us use. If I only have a small amount of meat I'll wrap in foil and towels and stick in the microwave. Don't slice till just before serving.

If you only have a few hours to hold the meat this works well. Gauge the finish time of your cook accordingly.
