A simple but good blue cheese sauce for steak is:
1/4 - 1/2 cup blue cheese
1 - 2 tbs unsalted butter
1 tsp worcesterchire sauce (or to taste)
1 - 2 tsp of chopped fresh chives
salt and pepper to taste
Melt butter in saucepan. Add remaining ingredients and heat until blue cheese melts.
All of the ingredients can be adjusted to match your taste. It is simple and takes maybe 10 minutes to make. I make it while the steaks rest after they come off of the grill.
