At room temp, that's a tough one. You can give it a smell to see if it has a rancid oder to it. I know people, that store their bacon grease in a jar on the counter. Since it was cooked/rendered, I'd say a week maybe 2 tops depending on the "room temp". As far as the fridge goes about 3-4 months before it starts to get off flavors. I use a small mason jar and store my bacon grease in the freezer. HTH
