here is another that's a little different
Johnny Earles, owner-chef at the award-winning Criolla's in Grayton Beach
Mojo Criollo
One cup olive oil
1/3 cup orange juice
1/3 cup key lime juice
8 cloves garlic, minced
1 tablespoon ground cumin
1 tablespoon ground coriander
1/2 of a habanero chile, seeded and minced. Substitute 1 large jalapeno if timid
1 teaspoon ground ancho chile powder (optional)
1.5 tablespoons Kosher salt
1 tablespoon granulated sugar
Mix all ingredients together in a blender.
