recommendations for turkey rub

Anyone have a good recommendation for a rub on a new year's day turkey smoked over apple wood?

Aaaahhhh, New Years Day, Football, and Smoked Turkey....Plus a day off tomorrow!!!!!!!

Probably late on this, but salt, peper and some dried sage should do it. Put some fresh herbs and citrus in the cavity - maybe under the skin too.

I went with some italian herbs and rosemary. I came out very nice. Smoked at 350...took about 2.5 hours. Skin was very edible and meat was tasty.

I would like to try injecting next time.

My post is also a bit late but I wanted to give you the rub I put on my last turkey. It is below.

Spanish Spice Rub

3 TBS Spanish or regular paprika

1 TBS ground cumin seeds

1 TBS ground mustard seeds

1 1/2 TSP. ground fennel seeds plus ½ TSP whole fennel seeds

2 TSP. coarsely ground black pepper

2 TSP. kosher salt
 
Now that this forum is open again I have made up a few batches of the Simon & Garfunkle rub. It's great with Poultry and my guess is it would make a great breakfast sausage seasoning as well.
