Made homemade boudin last weekend. It's a very simple fully cooked sausage made with pork & rice.
My variety is made with smoked pork butts instead of braised & because my wife hates liver no liver.
Cooked up some for supper, most serve with mustard but I like with pickapeppa sauce.
