Mandarin Oranges - Ideas on what to do with them?

Our local grocer has some nice-looking 5-pound packages of Mandarin Oranges.

They have a nice sweet/tart balance, and the peeled slices are deep reddish-orange in color.
Only a few seeds in each orange.

Other than the obvious choices - Peel & eat, or toss slices into a salad.

Have you tried any particular recipe that works well with these little oranges?
 
Just off the top of my head:

preserved oranges in the style of preserved lemons (I don't know how well this would work)

candied oranges

orange sherbet

use the zest to season a pancetta cure (google "pancetta di larbo")

duck a l'orange

chinese orange chicken

mandarin infused vodka
