    standard method question

I'm going to be smoking four boneless turkey breast halves tomorrow all a little over 2 lbs. I rarely cook at higher heat, so have a question. Goal is to keep between 325-350. Since they're boneless they're not going to take a ton of time, probably 1hour or 1.5 max. Do you think can get away...

    New Thermoworks Smoke

Proud owner of a new TW Smoke from Christmas!! What's your advice on how to rig it up? Run the probes through the top vents, door or under the lid? Mostly smoke butts, but occasionally something else large like a turkey or prime rib. Appreciate the input!

    BSCB- What's your go to?

We use Stubbs Chicken Marinade a lot. Sometimes use a dry rub and glaze with whatever bbq sauce we've got in the house. I'm curious what you all do with the plainest of the plain. Any good rubs, marinade, brines or sauces you use that the family loves?

    Roadside Chicken help

Morning guys. I've got a load of 20 thighs marinating now. Making them for a cookout at someone else's house. Arrive at 3 and eat somewhere around 5:30. Was thinking that I'd throw in the WSM at 350ish for about an hour at our house around 1:30. Then put in a foiled tin to bring to the party...

    S-320 Clean UP

So I ended up getting that 2010 model S-320 and have ordered a new starter... I figured I'd wait to begin it's clean up until that arrives early next week and do everything at once. This is my first Stainless grill, so I am looking for some tips on cleaning/maintenance. This is also my first...

    S330

How long ago did Weber move the knobs from the side to the front? Going to check out an S-330 tomorrow that has knobs on the side. I know the starter will need to be replaced, but I figure that's easy enough.

new gasser needed... help me out here

Ok guys, it's time to put the ECB to the curb. It had a good 6 year run, but finally it's rusted through. I had the old HD $199 special that has 486 sq in of main cooking area (18 X 27). I'm debating between the Genesis and the more wallet friendly 3 burner Spirit. There are times that I...

    Abt's

Going to do a bunch of them today for a party we are attending. I am doing twice the amount I normally do, so I am thinking of using the WSM. I typically use the kettle indirect with about half a chimney of lit. They will be the only thing on the smoker. Should I use the same amount of coals...

    water question- 3 butts

Ok gang. Going to do three butts on Friday for my brother in law using my 18.5. Will be going overnight, shooting for 225-250 throughout... The butts should be about 7 lb each. Normally I load it with two butts and use water in the pan. If I do a third, should I cut back (or eliminate)...

    temp & fuel question

how would you approach getting the WSM to 250-275* for 3 hours? I'd prefer to be on the lower end of that range. Going to do some CSR's and brined BSCB Normally I do longer cooks, so in 1.5 years of owning it, I have only ever used the minion method. The timeframe seems short for it though...

    Country Style Ribs

How do you all cook 'em? My local butcher has them on sale, and I want to give them a whirl... My options are on the gasser, 22.5 kettle or WSM. Looking for any suggestions, mainly on cooking method- but if you've got a great recipe to share, that's cool too!

    first attempt psb question

I am thinking of doing a test run before I make a mass quantity for the 4th. Probably will use my 22 kettle instead of the WSM. I don't cook indirect on it often, so roughly how many coals will I need to keep 250ish for 2-3 hours? Do you guys minion it? thanks, Brian

    refueling 18.5

I am about 20 or so smokes into my WSM journey, and never had to refuel. I put on 15.6 lbs of boston butt last night around 11:30pm. The lit temp (which is consistently 20' lower than actual was showing 200-210 since I woke up around 7:30am. That's lower than usual when I do an overnight. I...

    Costco Butts

Having a bbq for about 8-10 adults and 12ish kids. I've been put in charge of PP... unless our Publix puts them on sale, I'll be headed to Costco to grab two boneless butts. Ribs and chicken on the menu, so it's not the only thing being served. My question is, what is the difference in...

    Swift Premium Ribs

Do they always come membrane off? Never purchased them before, but a friend asked me to cook them for a BBQ today and dropped them off to me. They have a Costco tag on them, if that makes a difference. I spent a few minutes wondering why I couldn't find anything to peel back at the early...

    lid sticking

ok, not a totally new owner but this is something that could help those who are. I am about 15 cooks in, and the only parts I clean after a cook are the grates and the water pan. on my last cook I noticed the lid sticking to the middle section, and when the seal broke it would pull ash up from...
