Zupa Toscano (a riff on it) and Cioppino with clams, scallops and shrimp over spaghetts

Zupa Toscano made dairy free (coconut milk). Used spinach instead of kale, with sausage and potatoes in the soup. Broth is homemade chicken and pork stock I reduced yesterday.

Costco had nice Cockels (small clams from NZ) so it’ll be those with scallops and shrimps and served over spaghetts.

And seared salmon in the CI as wife isn’t a big shellfish person.

The cioppino sauce is ready. Just need to add the seafood.

Looks really good... reminds me of something I made earlier :ROFLMAO:
I'm thinking salmon again this coming weekend.....I brought home another 5 lbs and froze it.
