I wanted to tell all of you about the stellar performance that my WSM exhibited last Friday/ Saturday on an overnite cook of a 6-7 lb. pork butt. I put a half a chimney of glowing Kingsford onto a full chamber of Kingsford. Dropped a piece of maple on the coals, assembled the cooker, Filled the water pan (ECB pan)with hot tap water, put the butt on the top grate, and had all three vents wide open. That was at 10:00 PM. As the temperature reached 250 at the lid (20 minutes or so after assembly), I closed one vent, and throttled the other two back to 1/2. Checked the temperature an hour later and it was steady at 250 (all temps taken by thermometer in the lid vent). Went to bed. Got up at 07:30 AM and the temperature was at 250, and the water pan was nearly empty. Put 1/2 gallon of hot tap water in the pan, and stuck a probe in the butt. After about an hour, the butt was at ~ 200, so I took it off, and put some hot dogs on the top grate. Temperature returned to 250. An hour later, I took the hot dogs off, and put the lid back on. I also stuck the thermometer back in the lid just to see how long it would keep chugging along. Well, all told, it maintained 250 until about 03:00 in the afternoon, then steadily declined until it finally went below 225 at ~ 04:45!! I did not add any charcoal, and didn't stir the coals - just let it run. There was no wind, and it was not a hot day. The cooker had direct sunlight on it for a couple of hours on Saturday AM, but then, it got cloudy. Seventeen hours at 250 degrees!!! I realize that kind of performance was an anomaly to some extent, but I thought that some folks may be encouraged hearing about the WSM's potential when all of the stars are lined up right. By the way, the butt was superb!!!
