Yields on Brisket and Chuck Roll?

Hi all,

I'm planning out a cook I'll be doing in two weeks. I'm planning to do a 20 lb chuck roll and a 15 lb brisket.

After allowing for waste and shrinkage I'm thinking I'll end up with about 10 lbs of CR and 9 lbs of brisket.

Does that sound about right?

Rob,
The Chuck I did last week started at 16 pounds and when it was done I still had 11 pounds of it left. I'd only lost about a third of it. I'd say you're right on for the brisket though.

Wonder why I lost so much on my first CR Bryan?

Remember that one I did a few weeks back with the roasting rack? It started out a little over 14# and I ended up with about 8#.

However, you're the CR expert so that's what I'll plan for.
