hi again. i just opened my 11 lb brisket out of cryovac. i noticed on one side of the flat about 6 inches from the end of the flat there is a big cut almost all the way throuh on the side of the brisket. its about 3 or 4 inches long. should i be concerned about this or just try to keep it pressed togeather?

Dip a pastry brush in some oil and oil inside the cut. Press together as best you can then don't worry about it. It may separate during cooking but leave it be.

Enjoy your cook.

Don't be. No matter what, you'll learn a lot from the cook and that's a good thing.

I'd suggest foiling (as a few people noted in your other thread) and resting is important of course.

Be patient, don't chase temps, resist the urge to peek--just smell and enjoy the coolness factor: have a good time.
