I did 3 racks of BB's...full water pan.....minion with KBB and buried pecan wood chunks. Used about half half of the small chimney to start....
I had to really close the vents down to keep it below 275. One vent was totally closed with other two barely open....It really wanted to go 260-265 with vents shut way down......I wanted it at 250....temp would seem to take off when barely opening the vents.
This is a seasoned smoker and I used water so I wouldn't have to babysit.....you would have thought pan was empty or something!
