Hi all,
I'm heading off to bed, but here are a
full set of my images are here:

I did ribs for my maiden voyage, I took them off
at 4 hours and 10 mins. ( you'll see one image of the thermometer very high.... the ribs were NOT in the smoker at this time... I waited until it got down to 250.

One thing I have to say, - the WSM is like a dream, I can't believe how nicely it kept the temp constant, just beautiful !

I found myself under a lot of stress today, I guess because of the initial smoke that was coming off the Weber chimney from the newspaper.... a few neighbours looked over to see if my deck was on fire, but then it subsided and I calmed down.

The last thing I want is to tick neighbours off with smoke going into their kitchen windows, around here let it happen for too long and they would call the cops on ya.

Anyway I will start the chimney around the house next time and them bring it into the backyard after most of the smoke is gone, or use way less paper, as I think it was that that really caused the smoke storm hehe, and lack of air that was getting to the paper while it burnt Ii believe.

Those are some unusual-looking spares, based upon what I'm used to seeing, but if they taste good, who cares?

As far as the neighbors, two sheets of newspaper stop all the smoking in about 10 minutes. If they pitch a fit over that, show them the final product-- let them have a taste-- and I'm sure they won't complain again.
