WSM capacity on Butt and Brisket

I have just graduated from the WSM school of ribs and chicken. I am ready for Butt and Brisket this weekend.

Average size butt at the store goes around 8 lbs. Brisket comes in a flat or the big one. I guess that is flat and point and is about 11 lbs.

Is it better to smoke the big size brisket or do I just do 2 flats? How about 2 each 8 lb butts? I was thinking brisket on bottom rack and butt on top.

Planning on my first all nighter this Fri.

I prefer doing whole briskets and for your first one I suggest starting there (better chance of having a good outcome).
To get two briskets on one grate is next to impossible. I would put in a third grate if doing 2 briskets, two butts is no problem on the top grate.

I will go with two butts on the top and a whole brisket on the bottom. Plan to use your method and put the meat on around 8 pm.
