WSM 1st Trial Run

Hey guys and gals.

Just fired up the WSM 18.5 with a rack of ribs. Got the temp set at about 225 Deg F with a thin gey stream of smoke coming from the top vent.
I used a variant of the Memphis rub that’s in the BBQ bible cook book. I can't help but be amazed at how stable the temp is in the WSM.

The temp has peaked to 250 and the smoke has faded away. Now it's wait till the meat is done and feast. We are having Sweet Taders and vegies too. MMmmm:wsm:
 
OMG! I just cooked the best ribs I EVER had.
They have a great smoke ring and the smoke flavor was NOT tooooo powerful.
My family is loving it!

Congratulations! Makes me hungry thinking about it. I had grilled talipia tonight.:( Not too bad, but certainly not ribs. It's a diet thing.
 
Man I love fish. It's not a diet if you love it;)
I went fishing with a pal at work in Miami back in the 90's. We caught 18 Dolphin (Mahi Mahi).
We fired up the grill and MAN were they good.

Congratulations Van. Ribs are a great choice for the first cook. The WSM and "Through the Miracle of Time" as quoted by the BBQ Pit Boys and Voila!:wsm:
