I just made my worst ribs ever, and on the WSM 22!
I was smoking turkey legs, high and fast (well if 2 hours is fast) and the wife wanted some ribs so I threw them on also, for 3 hours (I think didn't pay that much attention) I was running the 22 at 325, it started out at 360, then I shut the vents most of the way.
Anyhow I didn't wrap the ribs, just left them there, you can't kill ribs, or is that pork butt?
Anyhow, when I took them off they were a tad on the tough side. The wife said they were "ok" but her expression said it all LOL
Maybe if I had pulled them a half hour sooner....
but the turkey was good!
