Got my 22 WSM going and due to a breeze I'm having trouble getting above 175 on lid thermometer. should I just wait until the Minion Method kicks in or add another chimney of lit coals? Fire been going for about an hour and 15 minutes.
 
What did you start with? Can you describe your process for getting started?
How much unlit in the chamber?
How much lit from the chimney?
What were the vents set at?
Are you using water in the pan?
Was the water cold when you started?
Have you put any meat on yet?
What kind of charcoal are you using?
What's your definition of a breeze?
