Most people on this site use chunks of wood. I currently am using some JD Oak wood chips. I pack about a handfull into a foil pouch (dry), seal the ends, poke a hole in top and place on coals. So far I am happy with the results. Would I get better results with chunks?
 
I don't know which gives better results,
but it just seems easier to buy chunks
and simply toss them onto the coals through
the door when needed.
Just my opinion.
 
I had posted a question the other day about using pellets. One of the respondents said chunks were the way to go since they burn slower. I use chips when I use my gasser because they ignite faster and because the recipe I use for a smoking effect on rib-eye steaks only calls for the smoking part to last for 10 minutes of so. Just enough to impart the mesquite flavor.
