Wisconsin > Arbor Vitae: Bad Bones Barbecue

In October I was in northern Wisconsin and had a chance to stop at Bad Bones Barbecue in Arbor Vitae (FB page). Even though it was a wet, chilly day in the middle of October and it was 1:30 in the afternoon, the dining room was still packed...and there were even some WI-plated cars in the parking lot!;)

It's right on US-51, just south of WI-70.

Because the dining room was full I got a to-go order of ribs, pork and brisket with beans, fries and Texas toast.

I would've like the meats to have had more smoke but they were definitely not undersmoked by any means; they definitely had more flavor than a lot of other barbecue I've encountered here in America's Dairyland, and the feel and texture were spot on. No mushy brisket, no overcooked FOTB ribs. The fries were excellent and while I couldn't tell if they were scratch or doctored, the beans were really good as well.

And even though there were a lot of customers there, it took just the right amount of time for my order to be ready - 1 beer.(y)
