Wings, Rings and Potato Things

Had a craving for wings, so picked up a 5 pound package on the way home from work.
Wings were given a kosher salt bath for about 30 minutes and then coated with olive oil.
Wiped most of the salt off and then hit them with Penzeys Old World Seasoning.

Fired up the WSM with a half ring of lump, added a few oak chunks and then poured 3/4 of a
chimney of hot Kingsford Comp on top. Brought the WSM up to 350 with no water pan or
drip tray and put the wings on.

Sauced them with apricot pepper jelly from HERE after 45 minutes and let it set in for another 10 minutes.

Wings are done! They were actually to temp at 45 minutes, but wanted to get them a little
crisper and wanted the sauce to set.

Here’s your plate! I also picked up a bag of russets and a bag of Vidalia onions on the
way home, not realizing that we still had a full bag of Vidalia onions at home. So my wife said
she would take care of the sides tonight and made onion rings and twice fried fries, based on a
recipe from HERE in the deep fryer.

Very delicious dinner! First time I used the apricot pepper jelly and it adds a real good
flavor to the chicken. A little spice with the jalapenos and a little sweet with the apricots.
Not my usual Sriracha wings, but since we still have company at the house wanted to be a good host.
The potatoes were excellent and the only modification my wife made to the recipe was to add some
garlic powder to the salt and pepper. Onion rings were out of this world and I only wish she
would have made more than she did.

those look sooo daggumgood, that little plate at the end of your post ain't gonna cut it dude!
honestly, it looks like one of those "hor doves" kinda plate thingy... i'd eet that in 17 sseconds, wipe my face and look for lots more

Looks great Mike! The apricot pepper jelly sounds awesome. One question: What did your wife coat the onion rings with? They look divine!

Nope, don't mind at all. Most of them were cooked to an IT of 185. Seems high, but they were very moist and the skin was crunchy.
