Wing Finishing Question

I know that many of us have smoked our wings to impart all the wonderful things that smoking gives us, and then finished the wings on the grill to crisp them up. Has anyone ever smoked or partially smoked wings, and then finished them in a deep fryer. I'm a huge fan of fried wings, and I wonder if this would produce a desirable result.

I tried it once, and I don't think it went well. Not sure where I went wrong. I like fried best, smoked second for wings. However I tend to grill wings way more than fry because of the ease of grilling vs. setting a fryer and dealing with oil.

I have seen/herd that method before and the comments were great. Never done it myself though.

I will se if i can find that post.

I don't see why it wouldn't work. Deep frying is simply the best method to quickly crisp wings. I like to use the technique as a finish for wings that have been cooked to tender first. Make sure your oil is very hot as you want to crisp them in as short amount of time as possible.

I like them brined for an hour or too, no more so they not to salty. Then grilled crispy. No oil to mess with. Deep frying is prob. the best way overall. I just hate messing with the oil.

I'm not a fryer - don't like the mess and the clean up.
I grill my wings - start indirect and finish direct to crisp up. Usually add some chips or small chunks for a little smoke.
Did 5 1/2 dozen pieces for Super Bowl. Fired up both my OT's and did half with some hickory and half with some cherry.
