What can be done with one of these big old hunks of meat? I have never smoked a fresh ham before. Can it pulled be like shoulder or should it be sliced? I saw one in the meat counter yesterday next to some picnics I was buying. It took a lot of willpower not to throw it in the cart with the picnics. I still might go back and get it tonight though.
Fresh hams make a wonderful pork roast, but better sliced than pulled, IMO.
But its best end is as corned pork, a blissful halfway point between roast pork and Smithfield ham. It's a specialty of a pretty small area in Eastern NC.
