Which burners to turn on

I have a gas Weber I bought in 95, and It's not the largest, or the smallest, and don't know the model. I use those wire racks that you can hang 10 chicken legs each, and I use 4 racks with a total of 40 legs. I have been cooking with the center burner off, but the racks are not centered as in overlapping on the front and rear burners and are placed perpendicular (front to rear) to the burners. Was wondering if I should just use all 3 burners on low? Thanks, Frank
 
chicken usually works better when cooked indirectly.

I would leave the center burner off, and maybe rotate the racks once in a while and/or put an aluminum drip pan across the top flavorizer bars, but under the grates. (Maybe start with a little water in the pan.)
