Just placed my order for the 22" and a mitten.
Suppose I'll have my "wow" moment putting it together. Next purchase is the Stoker kit.
Time to get ready for the catering business.
Wanted to attend Melissa Cookston's Q class, but it's $750! I'll put that in gear, and pick your brains instead.
 
If you're going to compete in competitions, you may want to "invest" $750. Although a lot of other great cooks charge a lot less. If you're just catering - put your money into marketing your catering business.

Good choice! However if your other goal is comp and you really want to win and take a fast track to getting there, probably an intensive comp class with a pro is not a bad idea.

Care to enlighten us on the names of those great cooks who charge less. I might be in the market myself for a good comp class.

Well, I'm in Colorado and through the Rocky Mtn BBQ Assoc we've had Texas Rib Rangers for $200 a head. Other people that don't charge a small fortune. Kelly at Four Legs Up, Bob at Burnin' Bob's Butt's and Bones. Check online at KCBS.US. Kansas City BBQ Society.
 
Think I paid about $200 for a Chris Lilly class which was an overnight class geared for competitors.

Got a free autographed apron though from Chris.

**** sir! That's a serious obsession you have there. I guess I can always order the cajun kit later. What part of Mississippi are you from? I'm from Jackson. Ever been to E&L on Bailey Ave.? Lived in Hattiesburg, my good friend who caters, owned Letha's for a bit before selling back to the family. The best que I ever had was from a T-Model Ford smoker that use to show up at blues events. Man seriously knew how to smoke meat.

Mac, I have talked to Harry about comp classes. He says that he will wait to offer a comp class until after he competes in The Jack. His class now is a general BBQ 101. I have done that thru CBBQA and am looking for more comp oriented stuff. But thanks.
