Where is the best place

Howdy,

I was just wondering where you Pacific Northwesterner type bbqers get your brisket/pork butt/ribs/insert favorite bbq meat here./ Specifically towards the south sound area (federal way/tacoma) I saw a post from Jim Minion that mentioned a supplier and was wondering if they would sell in small quantites. Also is Costco any good? Their ribs look good to me. Thanks again.

I buy most of my meats at either WinCo Foods or Costco. Most of Costco's meats are Choice grade and, yes, it is good.

Costco, Sams, Interstate meats, EJ Distributing, Monodo's Meats, and Cash & Carry, are the main suppliers not in that order.

In addition to the places Jim mentioned I buy Butt's and Brisket by the case from local meat wholesalers. They are listed in the yellow pages. Some will sell by the cryovac and some only sell by the case. I like getting a sealed case with the packing date on it.

Normally I buy my Chicken at Costco which is also a good source of Babybacks. I buy my Spares at Cash and Carry I prefer their IBP spares to Swift sold by Costco. Butts and Brisket I buy in bulk use fresh for competiton and freeze the rest.

I get my ribs from Costco and my pork butt from Safeway. Chicken comes from either depending on whether I want to fight the Costco crowds.
 
While I no longer live in the area, I always bought my meats from Butcher Boys in Vancouver, WA. I recall they are on 4th Plain, about a mile east of I-5.

Sometimes, all they were doing was reselling a basically untouched cryovac package of meat, but at least they would look for un-injected suppliers for me.

They were reliable, reasonably priced (not a discount place), and very good quality. Would occassionally see choice brisket.

Worth giving them a try.

Smoking in Chicago, but hanging out in Salem, Oregon this week and next on a project for work.

p.s. tried some BBQ from Backyard BBQ on ST. Johns Road and Minnehaha in Vancouver last night. He uses a cinder block smoker, don't know what type of wood, for sure. Had his brisket and his spare ribs. Brisket was sliced thin and was dry. Ribs were ok, does not remove the membrane, no apparent rub other than salt on the underside of the ribs. Two sauces, sweet and spicy. Sweet was very tasty, thick and dark (mollasses?) Spicy was more than just a hot version of sweet. While it was good tasting, it was a little too hot to eat much of it. I finished the sweet on the ribs, tossed out most of the hot after a couple tastes.
