what to smoke ... what do u like ??

Hi again, me again !

Well since i got my WSM18 1.5 month ago, i do smoke a lot

i tried :

Back ribs
Brisket
Cured brisket
Pork butt
cured duck breast
whole chicken
chicken breast

The ribs, the pork butt, the briskets and the cured duck are simple amazing ... but the chicken, i must say that i simply do not like the smoky taste in it :S !!! Am i the only one ?

i did however cooked 3 chicken on beer can WITHOUT smoked and that i liked a lot ....

what's your opinion ?? anything you do not like to smoke ?

and what's your favorite ?
 
Louis, birds like just a bit o smoke. I cut apple rounds into very small bits. Less than a fist size all together.

I think that one of my faves are beef ribs, if they are really meaty.

How many people are you cooking for. Yoe are a prolific smoker!
 
My favorite thing to smoke is ribs. We recently had some St. Louis style ribs and Sweet Pammi Sue was RAVING about them! She prefers BBs,but the St. Louis style was a big hit.
I don't usually smoke chicken on the WSM. I prefer to spatchcock the bird and do indirect on my kettle. I add about a handful of soaked chips for flavor. Not too much smoke flavor,and even soaked ,they burn up pretty quick!
 
Things I like on the WSM that aren't on your list:

Wings
Country style ribs (shoulder)

Both of those two are super easy, and really good.
 
Louis, chicken absorbs smoke very quickly, very little smoke wood is needed for poultry. Also chicken or BBC is best cooked at higher temps 325-350 range.
My favorite things to smoke are good meaty beef spares, beef short ribs, thick cut flanken beef ribs and 2" pork steaks.
Louis you need to try some fatties on your next smoke.
 
mk evenson, i am a prolific smoker lol .. at least i think ! and i cook for ... only me .. mainly !! but i try to smoke on sunday so on monday i bring leftover at work for lunch lol ! Now i think i understand why people are starting to love me lollll

Now, i did already tried a fatty, that is pretty good, but pretty american lol =) i'll reserve this for tailgate only ... all the fat help the beer to keep flowing :P i posted pictures of my fatty on this forum.

What i liked most was back ribs but i really liked my cured brisket too, please try it that is very good ! my recipe is on the new comer forum (title include Montreal Smoked Meat).
 
As has been mentioned, different meats require different wood and different amounts of it. Go very easy on the smoke for chicken and you will love the results.
