what to do with the skirt off of the st louis style spare rib?

Help I want to smoke some spare ribs this weekend what do I do with the skirt after I have trimmed it off?

Put it on with the ribs.

It's a cook's snack during the cook.

Also a good opportunity to try different rubs, mops and glazes without committing a rack of ribs.

You can also overcook it a bit until it starts getting dry/hard. Then you can chop it up and add it into your baked beans! Mmmmm.... good!
