Piggles are a fantastic BBQ concoction I came up with after grilling a pickle once! I had a fried pickle once and liked it but never saw anyone season and grill a pickle so I said, "let's do it!" it was pretty good but nothing really name worthy so I set out to create the next MOINK or ABT or FATTY or BACON EXPLOSION and this is what I did...

I took a large kosher dill and split it lengthwise scooping out the seeds. I then allowed the "pickle boats" to drain excess juices on a towel while I made the stuffing. I finely chopped pre-grilled smoked cheddar brats and mixed in some shredded cheddar cheese. I then filled the boats with the stuffing, spritzed with apple juice, wrapped in bacon, seasoned with BBQ rub, and grilled indirect around 3-400 until the bacon crisped. Before pulling them I added a light slather of some sweet baby rays sauce and I had a "PIGGLE"!
The taste was all the right tang from the pickle, the sweet from the apple, the cheesy, light on salt, and saucy delight! Out of the hundreds I've made, I have only met 2 who didn't like the end result. I admit, it does sound a little strange but it is something different that will totally WOW your friends. I'll throw in a slideshow of my first batch of "PIGGLES" some variations include using some diced Jap's and cream cheese in the stuffing.
