What size butt?

I've always purchased larger butts to make sure i have enough meat for the crowd, but have struggled aat times to finish on time. Last cook, I purchased two 5lb butts to reduct cook time.

Is there an optimal size butt or put another way, is there a size that is too small to produce juicy and tender meat?

I like big butts....

sorry couldn't resist....

actually, smaller ones have a greater surface area to volume ratio thereby allowing more bark...so if you like a lot of bark in your PP, use smaller butts...I generally like to do 2 6 pounders, can be done without doing an all night cook.

Depends on my allowed time. 4-6 pound if I start cooking in the morning, 9lb range if doing overnight.

Dave - I usually buy a two pack from Sam's Club and try and stay in the 14 lbs total range (cook both of them). I can start them at 6:00 am and have ready to serve by 6:00 pm.
