I have seen this cut in United Grocers (our Smart & Final). I have a buddy who cooks it like a butt and pulls it. He claims its better than a butt because it contains less fat. What is it?
The National Pork Board says that it is a shoulder cut. More specifically, from a boneless picnic where all of the bones, cartilage and skin have been removed. It is almost fat-free (91-92% lean) and apparently is used in some Mexican and Asian cooking.
Actually, I never heard of it until I looked it up.
Don is right about what it is but better because it doesn't have the fat is not the case for what most of us want shoulder for. I have used it for sausage but had to add fat to make it work.
