What alternatives in wood can I use?

Locally, I have supplies of Hickory & Mesquite for the BBQ. I would like to try Oak or Alder, but can't find any. Since I'm a wood worker, I have excess chunks of Oak, and Alder in my cut off bin. These should be OK to use shouldn't they? They have no finish on them or otherwise treated. How about Cherry? (Not the fruit tree).
 
You can use the oak and alder. You'll want to be sure it's adequately dry. I have not used non-fruit cherry but I've not heard good things. Perhaps someone else has direct experience with that.
 
Greg you should also be able to get apple and cherry. A friend has a wood business and I will check with him to see where he delivers in your area.
Oak can be strong, so use small amounts and add more the next cook till you find the right amount. Alder is quite mild doesn't do much for beef and pork IMO, better on fish and poultry.
Is it wild cherry? Can be bitter again use in small amounts till you find the right levels.
