What a difference a day makes

Well you have all read my thread about the tough ribs that I did on Friday night. Well we just finished off another rack tonight and Oh my God what a huge difference. I put them (BB's) on at 12:45pm and took them off at 6:45 pm and they were excellent. The only thing I think I would have done different would be I should have foiled them at 5ish, and I think they could have been perfect. The seasoning was unreal. I used the seasoning that was in the 3-2-1 recipe. It was spicy but I loved it. I can't wait for Larry R's big bash in two weeks, it will be great, especially now that I HAVE GOT MY you know what together. These ribs were pretty moist and came off the bone fairly easy. I made lots of notes on this cook that I will use on Laryy's big bash.

Remember, they are done when they are tender. Forget time cooked and internal temp when dealing with ribs.
