Weight Loss after cooking

Does anyone know approx how much loss you get between uncooked weight and cooked weight with brisket and pork shoulder? I realize it will vary a bit, but I am sure there is a guideline.
 
Wow, do you think it is that much? It seemed to me like it would be more like 75%. But then again, I have never weighed one after cooking.
 
Both yields include fat loss in trimming. They are based on what I purchase at and the final meat I serve.

These are the numbers I use and I have found to be accurate for me. They are slightly on the safe side, you may get 5-10% more.

Also, that is for packers on the brisket. Flats only have a higher yield, less fat.

Grab a kitchen scale and start weighing after purchase, after trimming, and then after it is ready to be served. You can't really go by post cook weight on the butt because you will lose some fat and the bone once it's pulled. Chopped pork get's a better yield because most people chop the fat in there which is one reason why I like to judge a place by their pulled pork.
 
I figure about 50% loss for trim and cooking for packers. If you subtract fat loss from trimming and only measure moisture loss from lean meat then much less. Also if you cook flats only then much less.

I made sure to weigh everything this weekend and I can say that on both brisket at pork shoulders it was in fact about a 50% loss. I never expected it to be that much.
 
I usually lose 2-3 pounds walking back and forth from the house to the patio to look at the smoker temp. But after the eating and drinking i never seem to be able to maintain the weight loss. In addition after getting the marvick temp probe it seems that I am gaining weight. How do you guys achive a 50% weight loss?
