Weekend cooking, tomatoes, scallops, shrimp

This is my first year with a garden, and I am not sure I can ever go back to store bought tomatoes.

So for dinner I needed to use some tomatoes, but wanted something I hadn’t made in awhile.

Setup:

These heirlooms are pink Berkeley tie dye. They are the best tomato I have ever eaten.

Toasted some fresh bread from the market that was buttered it up with some butter I melted with sage. Topped that with a little mozzarella, let it melt for a min, then added basil & tomatoes.

Lightly browned some scallops

Dumped in a sweet/spicy sauce/glaze to coat the scallops. I used a peach jam, apple mint, soy, sriracha and a Serrano from the garden, nice and spicy.

For dessert homemade Banana ice cream, which some chocolate mint from the garden tossed in, served between 2 German chocolate chip cookies. I am not one to eat many sweets, or ice cream, but these were delicious. Wish I had made the ice cream a little earlier so it was a bit more frozen. Although I made the ice cream, I did not make the cookies. I did have to work Friday!

Still trying to use those tomatoes, so for breakfast Saturday an omelet with tomatoes. I had some left over oscar meyer bacon from the Fourth’s ABTs, I had forgotten how thin it was when used for breakfast.

On Sunday, after watching my Braves

the NL East last place Phillies, I ran to the market to get a couple things for dinner.

Grilled up some chicken thighs for lunch this week and started some corn.

Then tossed some shrimp on and put an ancho mayo on the corn.

And plated, again with the cuke/cherry tomatoes.

Excellent cooks and photos Josh! I do miss the garden I use to have, but where I live there is either too much shade or none at all, so not a good growing atmosphere.
