My friend’s daughter is getting married today and she asked me to do the pulled pork for her rehearsal dinner last night.
I did about 30 pounds. 4A387575-1125-46E3-B5F7-9E475507ACF2.jpegDid two on the WSM and one on the performer. Went very heavy on the wood with predominately hickory but also a fair amount of peach. Probably used 10 good sized chunks between the two cookers.2CD3F136-2474-42D1-921E-B36274C9FC79.jpeg29287ACF-B3CD-4700-99C6-5523B161DF98.jpeg7F6BE5E7-D940-4C69-BBC7-C5AFDBA44D21.jpegPut them on at 8am and wrapped when they hit about 170. Pushed through stall. No water in WSM. Got temps to about 330+. Made some sauce from the Weber book…546E8D25-2C96-4DEB-8C3E-0A6DDACE1212.jpegD493CA61-AEA1-4DE4-9988-2F5B65E0746C.jpeg5B7A838C-48C4-41D0-B1DA-F32BD0BE402B.jpeg61280F05-749E-4688-81AE-2F3C2F0C0DDA.jpegPulled right before serving around 7:30. They had a good long rest in a cooler.58614F59-F9C8-427C-AEE6-9D949512C151.jpegA176C342-A53F-4935-A397-B08C28983B10.jpegAC374481-0A73-40BE-9FCB-2438F4084337.jpegThen a good rest for the cook!93E0CA2F-1AA6-4709-A64A-EB9C90944802.jpeg
