I never realized that it was common practice NOT
to foil the inside of the pan when using water.
In hundreds of cooks, I exclusively use water in the pan and only foil the inside of the pan for quick cleanup. I've never had a problem (that I know of) such as water escaping down into the coals.
Am I the only one who uses foil inside the pan with water?
 
I foil inside and out, replacing the inside every cook, and the outside only occasionally. Easy clean up-- dump the water, remove the foil. Wide HD foil only.
 
I just got my Brinkmann charcoal pan to use as my water pan in the WSM. This weekend I am doing a brisket flat and a 9 lb. butt, so I think this came just in time. I am going to foil the outside of the pan for the cook.
