Water Pan is dry

2 Briskets on my new WSM, & I let the pan run dry.

Do I live with it, or add water? I'm afraid of
steaming the Briskets.

Add water. I won't steam it any more than when you had the initial pan of water. Without something in the pan, your temp will rise too high and the result will not be as tender as it could be. Are you pulling it at 185 or so?
 
I just pulled the top one. It was at 185.

I'll add some water, & watch the bottom one.
