Venison Jerky

I found some recipes on the net for venison jerky. They said to take ground venison and roll it between waxed paper with some seasonings mixed in, and smoke it at 140F for 2 hours and then change the wax paper and smoke it for another hour. Has anyone done this and are there any suggestions? I think I'm going to try this tomorrow.
 
Russ, That sounds more like summer sausage than jerky. I have made deer jerky from ground deer in my dehydrator, using a jerky gun. A few weeks ago I made some summer sausage in the WSM that turned out real good. Let us know how it turns out.

I thought jerky was made from strips of meat. Not hamburger. Hmmmmm? /infopop/emoticons/icon_confused.gif
 
Do a Google search on the term "pemmican" for insights about dried meat products. (It's not just a jerky brand name).
