Vacation Meal

We go on vacation the last week in July. My plan is to smoke a few chuck roasts sometime the week before we leave for pulled beef sandwiches one night. I do not have room to take my WSM so that isn't an option. I was thinking I would pull it apart at home, freeze and put it in a slow cooker to warm up day of. Or I may try to cook it the day before we leave (Friday), wrap it and pull it apart on Sunday. Will it stay moist?
 
I would wait to pull it until after you reheat. The only time I would say go ahead and pull it before you store it is if you cook it in a foil pan and are able to retain all of the juices during the cook and while pulling.
 
I have no problem pulling pork or beef, vac sealing or ziploc bag freezing and reheating it later.
Either a bag in a hot water bath or the crock, but you have to watch the crock cause meat will dry out and turn to that dreaded shredded mystery meat after awhile.
If you have a sous vide even better..
