When using sand in the water bowl, how do the two grate temps compare? Which grate will tend to be the hotter one?

I'm planning to do bb ribs on both racks if that is appropriate, BRITU recipe.
 
Ton's of info in the search forum. So much that you'll get tired of sifting thru it.
My understanding is that sand will continue to absorb heat for as long as you let it. Water helps dissipate heat and can't get above 212. Sand can easily exceed that.
In short, a quick cook like ribs will see a difference in grate temps. In a long one the grate temps tend to come together. Top grate always starts out hotter.

I did search before I posted, and found lots of posts about sand vs water, and sand cooking "hotter", etc... but most only talked about overall temp, didn't find any that addressed the bottom grate vs the top.

But your reply answered my question perfectly, so thanks again!
