Using a pizza stone......

I'm thinking about using an old pizza stone in place of the water pan.

For those of you that have, or even use a clay pot bottom, do you still but the water pan in but leave it dry?

My only concern is how the heat will rise and if the pan make any difference since it'll be dry.

Last time out I fought temps because of the water don't think I really need it. I may use a drip pan on the lower rack with water etc. in it but It would also be nice to have more room over the fire in case I needed to add or just shuffle the coals.
 
I put the saucer inside the water pan. It fits perfectly in my 18" WSM. So perfect that it no longer comes out! I just foil the top of it before cooks.
 
I haven't been able to find a pot clay saucer the right size, in stock but remembered we have an old pizza stone that I'd feel more comfortable with in the heat. I can't imagine there would be that much difference with the bowl in or out. I may just try it

But not this weekend as I'd planned. The meat market got caught off guard with 3 cook offs this weekend within 20 miles or so. They didn't realize it until they got hammered yesterday and by this AM they were sold out and trying to get more in. So I'm settling for a tri-tip which I can do on my kettle.
