Ever struggle to get that boneless butt tied up? Always calling someone over to put their finger on the knot while you try to tie it before it lets go?

Try this method. You can do it by yourself and get really good tension without it slipping.

<UL TYPE=SQUARE><LI>estimate and cut string to length, leave a few extra inches

<LI>make a loop in one end, tie it around itself so that end of the string is now a loop

<LI>wrap string around meat

<LI>put free end of string through loop, pull to tighten

<LI>while holding the tension on the string, with the other hand pinch the loop where the string comes through to hold the tension there

<LI>now double over the free end to make a loop

<LI>put the loop under the taught string

<LI>pull the loop you made through the loop created by the previous step

<LI>pull the loop back to the pinch point to complete the knot

<LI>to undo, simply pull on the free end and it will come undone

<LI>to finish it, leave a small loop sticking out, pass the free end of the string through it (prevents the whole thing from coming undone if it slips) then trim the free end

<LI>wrap the knot strings around the string holding the tension a couple of times to really tidy up the knot[/list]
