Sorry for the late reply. My two year old sprays water on my new LED TV (killing it), internet problems put a damper on my new forum experience, and killed my big initial cook with the wsm. I had company coming over for dinner tonight and as I did not have time to properly season the new wsm I thought it best to use the old weber kettle for the spares tonight. It's kind of like playing food Tetris to fit 3 racks of ribs on a 22 in weber kettle. However, I've been doing it for so long I figured it would be a better option than using a brand new unseasoned grill that I have no experience cooking on. Even though i fought through hours of temperature fluctuations and food rotations (soooo looking forward to the wsm) the end product more than satisfied the guests. The look on people's face when they bite into good smoked food that they are used to coming out of a crockpot or oven is priceless. Thank you all for the encouragement and I look forward to being part of the group.
I never have smoked potatoes also known in these parts as spuds or tators. However after watching the bbq pit boys do those potato bombs, it is on the to do list.
