TX Style Beef Sausage

Really craving the small link type sausage that TX BBQ is famous for (think Kruetz's in Lockhart or any of the "meat market" type BBQ joints in south central TX). Anyway, I am in Northern wisconsin (brat country). Is there anyplace to get a good substitute for the TX beef links, even mail order? I think I can smoke them alright, but cant find anything close. I've tried the "beef sausage" ala Hillshire Farms, and while good on the WSM its not even close.

im from lockhart texas but live in wisconsin and the sausage situation in wisconsin is abysmal. i have used brats for catfish bait but having to use bricks for sinkers was getting annoying as the catfish kept tossing em up into the boat so i stopped using em for bait...

anyway the basic lockhart recipe for sausage is 80/20 gorund beef with a 80% beef 20% pork mix using salt, coarse ground pepper, and garlic salt as seasonings. it varies from bbq joint to joint but thats the basic mix. they typically let it rest for 24 hours in a fridge before smoking. some use curing salts others just salt.
