Saturday my wife and I had some friends over for the afternoon and dinner. I decided on smoking two whole chickens, I had found a recipe for a garlic butter injection a few days before and wanted to try it out. The injection was apple juice, butter, garlic powder, and brown sugar. I then rubbed the birds with a basic rub I made a month or so ago, then it was off to the 18.5 WSM. I was a little distracted by our guests and our 5 month old son so I don't know the exact cook time but around four to five hours at guru controlled 275. I also sprayed the meat with apple juice a few times during the cook. Oh, the birds were both right at 6.5 pounds. I put three sauces out, Blues Hog original, Blues Hog honey mustard, and Sweet Baby Rays hickory and brown sugar. The BH honey mustard is quickly becoming one of my favorite sauces, it is great on pulled pork as well.
