Two prime 7.5 ribs

I just used my new cooker for the frist time and did two chickens on the top rack with cherry wood. WOW I have never had chicken so good. Now I have two 7.5lbs each - 3 rib prime ribs for 20 people. Im going to do the recipe on hear, one herb crusted and one montreal seasoning. Should I do one on the top and one on the bottom?? or both on the top one. Two probes? Any good advice would help this newbee to this long love affiair of cooking on this awsome cooker.
 
If both fit comfortably on the top grate--not touching and outside edges not too close to the grate edges--I'd do both on the top. Switch positions (quickly) a bit more than halfway through, if you wish, to promote more even cooking as these roasts are fairly short cooks.

One probe is sufficient. Use it as a guide and check the other when the reading in the first roast says it is nearing done.
