When I get my smoker, the first thing I?m going to cook is the Ribs that everybody on this forum has recommended. When someone says use two chimneys, do they mean
1. Take a chimney full of hot coals and pour it into the smoker then light a new chimney and when it?s gray add that.
Or
Pour a chimney full of un-lit coal onto the gray coals in the smoker. If this is what they mean, do you then wait for the un-lit coals to catch fire and gray (before cooking) or can you cook right a way (while the coals on top are still black)?
