Two briskets on a WSM?

I plan to cook two briskets on my 18 1/2" WSM, which brings up these questions:

Can I smoke one on the top grate while the other is on the bottom grate?

Which grate tends to run the hotter?

How much will this add to the time to cook?

Any advice or suggestions?
 
Depending on the size of the briskets, it should be fine. Are you talking flats or whole packers? The bottom grate tends to run about 10 or 20 degrees cooler than the top. I would put a remote temp probe in both briskets so you know what is happening as any two pieces of meat will cook differently no matter what grate they are on. Good luck.
