turning pork butts

Hello all,

Going to be putting on 3 10lb butts in a few hours & I would like some input regarding rotating the butts. I'm using a 22 & smoking them on the top grate at 225 until they reach 195 internally. Thx.

Hi Tim.
@ 225 and using the big boy WSM, I wouldnt think you would have to rotate at all. I did 6 10lb's on my 18" WSM ( both grates ) and the only thing I did was stand them on edge with the fat cap facing out.

Tim, if you WANT to turn them use insulated rubber gloves, 1/2 turn every couple hrs while awake. The heat at the edges along the walls is a bit higher than the middle of the cooker. With butts tho you are probably pretty safe not turning at that heat.
